Anthony Solano is the founder of ZoJu Foods, an Afrolatino restaurant serving local and organically sourced, vegan foods out of Hartford, Connecticut. ZoJu Foods is a new business that opened its doors in 2023, so Solano is still making big decisions and actively working to introduce his unique concept to new guests. Before launching ZoJu, he was a trainer at Equinox in New York, where he began making specialty, health-focused meals for clients, which took off enough to push him into opening his own brick-and-mortar location bringing something entirely fresh to the Hartford market.
